Carolyn Braden: Clean Living and Eating, Humans and Animals

It's been almost a year since I committed my life to clean living. My husband and I have not felt deprived of 
anything since starting our new way of life.
We treat food as energy instead of an indulgence and that's what it's supposed to be.
The only big change we felt was not being able to eat out as much. That was actually a great change
because it saves so much money! We've found a few restaurants in Louisville that fit our way of life and 
whenever we travel, we do a little research before we go and can always find filling and good food. 

Fast food was an issue until I put together a meal plan for Wendy's. When you travel by car, finding a place 
to eat that is healthy is very difficult. We used to think Subway was such a great alternative to McDonald's but
that is so not true! Wendy's has baked potatoes that are just that; baked. They don't add anything to them prior 
to or during the baking process. I add a garden salad (dressing free) on top of the potato with a little salt (they
have sea salt) and pepper. 

Whenever possible, we pack a cooler with my homemade organic chicken salad, waters, Cliff or Kind Bars and 
kettle chips or Blue Diamond Nut Thins. 

Yes, people may think we are strange because of our new way of life but we don't worry about that.  I just 
don't think most people in the United States know much about health. When someone comes along with a
strong statement about health, they turn away because they hear it all the time. There's not a day that goes by
that news isn't saying something else will cause cancer. We are so numb to hearing terrible things so we don't
listen when it's actually true. After all the research my husband and I have done we know what to listen to and 
what not to. 

My clean living started with exercise, as it's always been a part of my life. Branching out into the clean world of
eating came next. Now I am starting to pay much more attention to the products I use to clean the house and
the products I use on my body. I switched to Natracare tampons recently. They are 100% organic cotton. I 
discovered my Playtex tampons were made with rayon and bleached cotton (and they never really did a great 
job) which is not a good thing to put in such an important part of the female body. The pure cotton ones are 
wonderful and not any more expensive. 

We are also very conscious about the food we feed our animals. We have our "kidney patient" cat eating 
Nature's Variety Instinct wet food, our Maine Coon on wet Wellness Core food and our dogs on Merrick wet 
and dry food. We're trying to wean our Maine Coon off of Core, but she's picky so it will take a while. Although, 
Core isn't a bad product. We just want her to eat on what our other kitty is eating to make it easier.
(He can't tolerate the phosphates in Core and will get sick if he eats her food).

People think eating organically and using healthy products is too expensive. I sometimes hear people in Whole 
Foods and Rainbow Blossom (the people that stop in, not their regular shoppers) gasping when they look at the 
prices. Eating clean actually fills you up longer because of the lack of preservatives and fillers. Thus, it is actually 
the better deal. But in reality, would you really put a price on your life and health? 

I know we can't rid our lives of everything harmful but we can try. I wish more people would truly take the time
to see what is going into their bodies. I still get sick sometimes and know my way of life doesn't make me 
perfect. I just know it is a smart thing to do. America needs to get on the bandwagon of other countries and
ban the GMO's. In closing, look that one up. See what a GMO is and why America sneaks them in.
 I'll give you one hint on why America allows them: Money.

Carolyn Braden's Wholesome Chow Organic/Gluten Free Cupcakes

These were truly the best cupcakes from a mix! They may be gluten free and organic but you could fool anyone into thinking otherwise. I used Wholesome Chow's organic and gluten free chocolate cake mix and their vanilla icing mix. I purchased the mixes at a local T.J. Maxx. I was able to get 10 large cupcakes from the mix. I kept them in the refrigerator. To add my own element, I added organic chocolate pudding. I scooped some mix into the cupcake liner, then some pudding and topped it off with more mix. It really made the cupcakes extra moist.

Try Brad's RAW Leafy Kale

After trying this kale at my cousins house, I was hooked. Kale is a very healthy green and Brad's makes it a yummy treat. These are chip-like and covered in vegan cheese. Pick some up to try at Whole Foods!

Gasthaus Louisville: Go There!

You won't be disappointed if you go to Gasthaus! In looking for the perfect restaurant to take my mom for her birthday, I found the reviews for Gasthaus. After reading review after review, I knew it was the place I needed to go.
A few tips I read on-line were spot on and I will pass them along:
Make reservations
Reserve your dessert when you order your meal (or you may not get any as they sell fast!)
Try the Strawberry Napoleon
Enjoy!

We got to sit in the cute little "doll-house" structure in the front of the restaurant. It was super cute!

Carolyn Braden loves Captiva Island's Bubble Room

If you ever visit Captiva or Sanibel Island in Florida, go eat at The Bubble Room. They are known for huge portions, Bubble Bread, and their desserts. I always have enough food left over for another meal the next day (scrumptious left overs!)
Here's a picture of their red velvet cake with cream cheese icing. I had to get my dessert to go because the food stuffed me for a long while. It's the reddest red velvet cake I've ever seen but it's truly great! Their food is very good too. It's a little pricey but worth it.

Carolyn Braden Says "The Yummiest Apple Cake!"

Here's a recipe from Southern Living magazine this month that rocks!  It is Fresh Apple Cake.  After a visit to Huber's Orchard in Starlight IN over the weekend, I decided to try making it tonight.  Of course I tweaked the recipe a little, but it is yummy!


Here is it:
1/2 cup butter, melted (use real butter!)
2 cups sugar
2 large eggs
1 tsp. vanilla extract
2 cups all-purpose flour
2 tsp. ground cinnamon
1 tsp. baking soda
1 tsp salt
2 1/2 lb. Granny Smith apples (that's about 4 large apples), peeled and cut into 1/4 inch thick wedges (then cut the wedges in halves)
If you like nuts, you can add either 1 1/2 cups chopped, toasted pecans or walnuts


Preheat the oven to 350 degrees.  If you are adding the nuts, bake them in a single layer in a shallow pan for 5 to 7 minutes or until lightly toasted and fragrant, stirring halfway through.
Stir together butter, sugar, and eggs in a large bowl until blended.
Combine flour, cinnamon, baking soda, and salt.  Add to butter mixture and stir until blended.  Stir in the apples and 1 cup of the nuts (if you wanted the nuts).  
Note!  The batter will be really thick!  Almost cookie-dough thick!
Spread batter into a lightly greased 13x9 inch pan.
Bake at 350 degrees for about 45 minutes or until a wooden toothpick comes out clean.  
Cool completely.
Spread the Browned Butter Frosting over the cake when cool and sprinkle with the remaining 1/2 cup of nuts (if you want). 




Browned Butter Frosting
1 cup butter (use real butter!)
1 (16oz.) package powdered sugar
1/4 cup milk
1 tsp. vanilla extract


Cook butter in a small heavy saucepan over medium heat, stirring constantly.  Cook 6-8 minutes or until butter begins to turn a golden brown. Remove pan from heat immediately, and pour butter into a small bowl.  Cover and chill 1 hour or until butter is cool and begins to solidify.
Beat butter at medium speed with an electric mixer until fluffy; gradually add powered sugar alternately with milk, beginning and ending with powdered sugar.  
Beat mixture at low speed until well blended after each addition.  Stir in vanilla.

Carolyn Braden Says "Easiest and Yummiest Key Lime Pie!"

This recipe is from Southern Living Magazine.  It truly is as good or better than any restaurant's Key Lime Pie I've tasted.  Seriously!  Any........it's lower in fat than a regular Key Lime Pie Recipe.

Serves 8

1 (14 oz.) can fat-free sweetened condensed milk
3/4 cup egg substitute
1/2 cup fresh Key lime juice (it took me almost 1 small bag of small key limes to get 1/2 cup of juice)  Use real juice!  Don't be tempted to use the bottled kind!
2 tsp. Key lime zest
1 (6 oz.) reduced fat ready made graham cracker crust
1 (8 oz.) container fat-free (or light) frozen whipped topping, thawed

1. Preheat oven to 350 degrees.  Whisk together first 4 ingredients until well blended.  Pour mixture into piecrust; place pie on baking sheet.
2. Bake at 350 degrees for 17 minutes or until pie is set.  Remove pie from baking sheet to a wire rack, and let pie cool completely (about 1 hour).
3.  Top with whipped topping and chill 3 to 24 hours.

You can use regular lime juice and zest if you can't find key limes.  My mom LOVES Key Lime Pie so I can't wait to make it for her the next time she visits!

Carolyn Braden Says "Yummy Summer Salad That's Pretty Too!"

Here's a yummy salad that I'm sure many of you have had before.  I love Caprese Salad and made it for my Fourth of July Celebration. I just wanted to make it prettier than I have in the past and easier to serve.  I cut wooden skewers down to about 7 inches long and alternated putting fresh mozzarella cheese circular slices (I used ciliegine mozzarella) with fresh vine tomato chunks. I chopped up fresh basil and put it onto a plate first, following with the skewer with the cheese and tomatoes on top.  I drizzled balsamic vinegar and olive oil on top and served it on festive plates. The guests just took their fork and slid the salad off the skewer and ate them all up!  So good!

Carolyn Braden Says "The Perfect Fourth of July Drink"

Here is one of the festive drinks I made for my Fourth of July Celebration this year.  It's from Southern Living Magazine and really easy!  It's Frozen Blue Margaritas!  Here's the recipe: 

1 6 oz. can frozen limeade concentrate, thawed
3/4 cup of tequila
1/4 cup blue curacao liqueur

Combine all ingredients in a blender.  Fill with ice to 5-cup level and process until mixture is smooth.  Serve immediately.

I went one step further to make them festive.  I rubbed a lime around the rim of the glass and coated it with red sugar sprinkles.  I also put the glasses in the freezer about 1 hour prior to serving the drinks to keep them extra cold for the frozen slushy mixture.  It was so yummy!  The perfect combination of sweet and sour!
